François is an oncologist by training but founded La Fontude in 2003. He diverted the conversion of old vines to organic farming and released a flock of rustic sheep on the 30 hectares of forest and pasture. When François took over the vineyards, many plots were in sad condition. That's why he chose not to use herbicides, chemical fertilizers or synthetic pesticides. By implementing these actions, the vineyard revived completely and biodiversity has returned. Wines are made through patient and meticulous manual harvesting, natural vinification without input in the cellar. After maturing in barrels of different sizes, the wines are bottled by gravity without fining or filtration.
